Great thing about Gouda is that there are different levels: young Gouda cheese is very light and mild and the aged Gouda has a strong, salty flavor. Pretty much for every taste!

The blue Gouda is made with lavender. I didn’t try it, but may have to give it a try on my next trip to NL in the spring…
